Ingredients -
bringal - 1/2 kilo
onion -2 ( paste)
coriander powder- 1 tablespoon
cumin powder - 1 teaspoon
jaggery - 4 tablespoons
tamarind paste - 1 table spoon
salt to taste
1/2 teaspoon turmeric powder
red chilly powder - 2 teaspoon
oil -- 4 table spoons
seasoning : 2 red chillies ,black gram dal 1 teaspoon,cumin seeds- 1/2 teaspoon , garlic -5 pods ,curry leaves
METHOD : clean and cut brinjals into water ,so that brinjals won't turn black,cut each brinjal into four sections length wise with out cutting off crown .in a pressure cooker heat oil and add seasoning ,fry for 2 minutes add onion paste,salt,turmeric powder , chilly powder, coriander powder, cumin powder and fry for 5 minutes on low flame , add brinjals and jaggery and stir gently with out breaking brinjals,fry for 5 minutes on low flame and add tamarind paste and 1 cup of water,and keep the lid on and cook on low flame till 1 whistle.
